
Potato Salad
Happy Ramadan to our Muslim brothers and sisters! Keep us in your prayers, even as we have you in our thoughts…and here’s what we think would make a good meal after the fast. Potato Salad! Oh, and did we mention that it was a fast dish!

REQUIREMENTS
- 500g Potatoes (preferably, Irish)
- 3 Spring Onions
- Chopped Parsley
- Grated Cheese (optional)
- (Thick) Mayonnaise dressing
What you do
- Wash, peel and cook potatoes until they are done. You might not want them too soft
- Drain potatoes, allow to cool and then cut into slices or cubes as you like
- Mix potatoes with chopped Spring onions
- Sprinkle your chopped Parsley on the mixture
- And if you like, add grated cheese to vary the flavor of your salad
- Dress with Mayonnaise
- Serve!
