
How To Prepare Chicken Yassa
Chicken Yassa is an African dish with mostly eaten by the people of Casamance, Senegal. This meal is basically chicken marinated in onion, lemon and spices then grilled or fried and later cooked with lots of onion. It’s practically Chicken and onion lol… so if you are not a fan of onion then this might not be for you.
Chicken yassa is best eaten with cooked rice. It can also be made with fish (fish yassa) where fish is substituted for chicken. It's also not unusual to see olives and chopped vegetables added to give the dish a wholesome taste. Below is the recipe, so you can try it out if it sounds like something you would enjoy.
REQUIREMENTS
- 1 kilo chicken
- 5 garlic cloves (minced)
- 1 tbsp. black pepper
- 2 seasoning cubes
- 4 medium sized onion
- ½ cup lemon juice
- Salt to taste
- ½ cup groundnut oil
- 2 tbsp. dijon mustard
- 2 bay leaves
- 2 fresh pepper (preferably rodo)
- Place the chicken in a mixing bowl. Add minced garlic, onion (blended), black pepper, crushed seasoning, salt to taste & lemon juice into the bowl and mix. Place the bowl in the refrigerator and leave to sit overnight.
- Remove the chicken from the marinade and place on a grilling rack. Grill for about 10 minutes on each side or till brown. To give the chicken a better flavour, you could use an outdoor charcoal grill.
- In an empty pan, pour in the cooking oil. Add the onion rings and stir-fry for about 5 minutes till it's well caramelized and brown. Add the mustard, grilled chicken and marinade from the chicken, fresh pepper, bay leaves.
- Add water and cover. Leave to simmer on low heat for about 15-20 minutes till the chicken is soft and tender and can be pulled off from the bone easily.
- Once it's ready, garnish with olives and serve with white rice. Enjoy!
